Tl dr: Don't bother syncing the Pro controller over bluetooth, just use it as a wired USB device. If the controller doesn't seem responsive, and the green LEDs at the bottom of the controller never seem to stop searching, then you can try to resync by shutting the controller off with the tiny "sync" button at the top, and tapping it to turn back on again.

If using a Switch Pro controller with Xbox Cloud Gaming on a Mac, I've discovered that it only works when directly wired as a USB device. Sorry if this is a repost, but my google fu hasn't shown any results relating to this particular issue, and after a few days of figuring it out on my own I'm just hoping to document this solution for others.
